We visited a local company that has over 40 years’ experience in making cheese. We were able to view the end-to-end process in cheese making, from milk arrival and curd formation to aging rooms, storage, and the final packaging lines. Watching the skilled team at work and learning about their traditional techniques combined with modern quality controls gave us a deep appreciation for the craft behind each wheel and wedge.

The production area hummed with activity: vats bubbling as milk transformed, workers gently cutting and stirring curds, and precise temperature and humidity controls in the maturation rooms. We saw how different aging times and conditions produced distinct textures and flavors, and how hygiene and handling at every step preserve quality and safety.

In packaging, efficiency met care—each product was labeled and wrapped to protect it during transport while showcasing its origin and age. Finally, the tasting was the highlight: we sampled varieties ranging from fresh, milky cheeses to robust, aged selections. The contrasts in aroma, creaminess, and finish made it clear why this company has maintained a reputation for four decades.

Overall, the visit left us impressed by the blend of tradition and innovation, and by the passion of the people who bring these cheeses to life. We came away with a better understanding of the process and a few favorite flavors to enjoy at home.
